For the Fritters:
- 1 1/2 pounds boneless, skinless chicken breasts (finely chopped)
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour
- 1 1/4 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 2 garlic cloves (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine the chopped chicken, eggs, mayonnaise, flour, mozzarella, Parmesan, parsley, garlic, salt, and pepper. Stir well until everything is evenly mixed.
- Cover and refrigerate the mixture for 20–30 minutes to help it firm up.
- Heat olive oil in a large nonstick skillet over medium heat. Scoop about 1/4 cup of the mixture per fritter into the skillet, flattening slightly with the back of a spoon.
- Cook for 3–4 minutes per side, or until golden brown and the chicken is fully cooked through.
- Transfer to a paper towel-lined plate to drain. Serve warm with your favorite dipping sauce or a side salad.
Notes
- For easier prep, pulse the chicken in a food processor until finely chopped.
- These fritters freeze well—just reheat in the oven or air fryer.
- Add a pinch of red pepper flakes for a spicy kick.
