For the Fritters:

  • 1 1/2 pounds boneless, skinless chicken breasts (finely chopped)
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour
  • 1 1/4 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 garlic cloves (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, combine the chopped chicken, eggs, mayonnaise, flour, mozzarella, Parmesan, parsley, garlic, salt, and pepper. Stir well until everything is evenly mixed.
  2. Cover and refrigerate the mixture for 20–30 minutes to help it firm up.
  3. Heat olive oil in a large nonstick skillet over medium heat. Scoop about 1/4 cup of the mixture per fritter into the skillet, flattening slightly with the back of a spoon.
  4. Cook for 3–4 minutes per side, or until golden brown and the chicken is fully cooked through.
  5. Transfer to a paper towel-lined plate to drain. Serve warm with your favorite dipping sauce or a side salad.

  • For easier prep, pulse the chicken in a food processor until finely chopped.
