- 8 lasagna noodles (broken into pieces)
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Chopped fresh basil or parsley for garnish (optional)
Cheesy Garlic Bread:
- 1 small baguette or Italian loaf (sliced)
- 3 tablespoons butter (softened)
- 2 cloves garlic (minced)
- 1/2 teaspoon dried parsley
- 1 cup shredded mozzarella cheese
Instructions
- Soup: In a large soup pot, heat olive oil over medium heat. Add the ground beef or sausage and cook until browned. Add onion, garlic, tomato paste, tomatoes, broth, basil, oregano, and red pepper flakes. Simmer, then add lasagna noodles and cook until tender. Stir in cheeses until melted. Season with salt and pepper.
- Cheesy Garlic Bread: Preheat oven. Mix butter, garlic, and parsley. Spread on bread slices, top with mozzarella, and bake until golden and bubbly.
- Serve the soup hot with cheesy garlic bread on the side. Garnish with basil or parsley.
