Potatoes:
- 3 pounds russet or Yukon gold potatoes, peeled and cubed

- 1/2 cup whole milk (more as needed)
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese

Instructions
- Cook Potatoes: Place cubed potatoes in a large pot, cover with cold water, bring to a boil, then simmer for 15–20 minutes until fork-tender. Drain and return to pot.
- Mash Potatoes: Add butter, milk, sour cream, garlic powder, salt, and pepper. Mash until smooth, adding more milk if needed.
- Add Cheese: Stir in cheddar and mozzarella until melted and combined. Adjust seasoning.
- Serve: Transfer to a dish, top with extra cheese or herbs, and serve warm.
