For the Mushroom and Onion Mixture:

  • 1 medium yellow onion (thinly sliced)
  • 8 ounces cremini or button mushrooms (sliced)
  • 2 garlic cloves (minced)
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream

Seasonings and Cheeses:

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

For the Topping:

  • 1 1/2 cups crispy fried onions

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Blanch the green beans: Bring a large pot of salted water to a boil and blanch the green beans for 4–5 minutes until just tender. Drain and rinse with cold water to stop cooking.
  3. Sauté the onions and mushrooms: In a large skillet, heat butter and olive oil over medium heat. Add the onions and sauté until golden and caramelized. Add mushrooms and cook until tender and browned. Stir in garlic.
  4. Make the sauce: Sprinkle flour over the mixture and stir to coat. Slowly add milk and cream while stirring, then cook until thickened. Stir in salt, pepper, garlic powder, and cheddar cheese until melted.
  5. Combine and bake: Remove from heat and fold in the green beans. Pour the mixture into a greased 9×13-inch baking dish. Top with Parmesan and crispy fried onions. Bake for 20–25 minutes, or until bubbly and golden on top.
