Additional Ingredients:

  • 1 (15 oz) can black beans, drained and rinsed
  • 1½ cups shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas
  • ¼ cup sour cream (optional)
  • Chopped green onions or cilantro for garnish (optional)

Instructions

  1. Cook Potato Mixture: In a large skillet, heat olive oil over medium heat. Add potatoes, onion, garlic powder, paprika, cumin, salt, and pepper. Cook for 12–15 minutes until potatoes are tender and browned.
  2. Add Black Beans: Stir in black beans and cook for 2–3 minutes until heated through. Remove from heat and stir in shredded cheese until melted.
