- 1 (15 oz) can black beans, drained and rinsed
- 1½ cups shredded cheddar or Mexican blend cheese
- 6 large flour tortillas
- ¼ cup sour cream (optional)
- Chopped green onions or cilantro for garnish (optional)
Instructions
- Cook Potato Mixture: In a large skillet, heat olive oil over medium heat. Add potatoes, onion, garlic powder, paprika, cumin, salt, and pepper. Cook for 12–15 minutes until potatoes are tender and browned.
- Add Black Beans: Stir in black beans and cook for 2–3 minutes until heated through. Remove from heat and stir in shredded cheese until melted.
- Assemble Burritos: Warm tortillas, spoon potato and cheese mixture onto each, add sour cream, fold in sides, and roll up into burritos.
- Optional: Toast burritos in a skillet for 2–3 minutes per side for crispiness.
- Serve: Garnish with green onions or cilantro and enjoy!
