Additional Ingredients:
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 6 large flour tortillas

Instructions
- Cook Potatoes: In a skillet over medium heat, cook diced potatoes in olive oil until golden and fork-tender. Set aside.
- Cook Beef Mixture: In the same skillet, cook ground beef and onion until beef is browned. Add cooked potatoes back into the skillet with seasonings and cook to combine.
- Add Cheese: Remove from heat and stir in shredded cheddar cheese until melted.
- Assemble: Warm tortillas, spoon beef and potato mixture onto each, add a dollop of sour cream, and roll into burritos.
