- 3 cups cooked shredded chicken
- 1 (10-ounce) can diced tomatoes with green chilies (drained)
- 1 (8-ounce) package cream cheese, softened
- 1 cup sour cream
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1/2 cup chopped green onions
- 1 cup crushed tortilla chips
- Fresh cilantro for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Mix Ingredients: In a large bowl, combine shredded chicken, diced tomatoes with green chilies, softened cream cheese, sour cream, and taco seasoning. Mix well.
- Add Beans and Corn: Fold in black beans, corn, and half of the shredded cheddar and Monterey Jack cheeses.
- Bake: Transfer mixture to a greased baking dish. Top with remaining cheeses and crushed tortilla chips. Bake for 25-30 minutes until bubbly and golden.
- Finish and Garnish: Let cool for 5 minutes. Garnish with green onions and cilantro. Serve hot.
