  • 1 (15-ounce) can black beans (drained and rinsed)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 cups beef or chicken broth
  • 1 (8-ounce) package cream cheese (softened and cubed)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • Salt and black pepper to taste

For garnish:

  • Chopped cilantro
  • Sour cream
  • Tortilla chips (for garnish, optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and onion; cook for 5–6 minutes until browned and fully cooked. Drain excess fat if needed.
  2. Add garlic and taco seasoning, and cook for 1 more minute.
  3. Stir in diced tomatoes, black beans, corn, and broth. Bring to a simmer and cook for 10 minutes.
  4. Reduce heat to low and stir in the cream cheese until fully melted and smooth.
  5. Add shredded cheese and stir until melted and the soup is creamy.
  6. Taste and adjust seasoning with salt and pepper.
  7. Serve hot, topped with sour cream, cilantro, and crushed tortilla chips if desired.
