Description

Indulge in the delightful Cherry Bread with Cherry Glaze, a moist and flavorful quick bread packed with maraschino cherries and topped with a sweet cherry glaze. Perfect for breakfast, snacks, or a sweet treat any time of day!

Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Wet Ingredients:

  • 1 cup chopped maraschino cherries (drained and patted dry)
  • ¾ cup whole milk
  • ½ cup unsalted butter (melted and cooled)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons maraschino cherry juice
  • ¼ teaspoon almond extract

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt. Fold in chopped cherries.
  3. Combine Wet Ingredients: In another bowl, whisk milk, melted butter, eggs, vanilla extract, and almond extract until well combined.
  4. Mix Batter: Pour the wet ingredients into the dry and stir just until combined. Pour batter into prepared pan and smooth the top.
  5. Bake: Bake for 50–60 minutes until a toothpick inserted in the center comes out clean.
  6. Cool and Glaze: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Whisk together powdered sugar, cherry juice, and almond extract for the glaze. Drizzle over cooled bread.

Notes

  • For a richer flavor, add ¼ cup chopped nuts like almonds or pecans to the batter.
  • You can substitute fresh or frozen cherries (pitted and chopped) for maraschino cherries; drain excess moisture.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
