Ingredients
Scale
Filling
- 1 cup cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
Wrapper and Coating
- 8 egg roll wrappers
- 1 egg (for egg wash)
- Powdered sugar (for dusting, optional)
For Frying
- Vegetable oil (for frying)
Instructions
- Prepare Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy, ensuring no lumps remain.
- Assemble Egg Rolls: Lay one egg roll wrapper flat with a corner pointing toward you. Place 2 tablespoons of the cream cheese mixture in the center, then add 1 tablespoon of cherry pie filling on top.
- Roll and Seal: Fold the bottom corner of the wrapper over the filling, then fold in the sides tightly. Brush the top corner with beaten egg to act as a sealant and roll the wrapper tightly to enclose the filling completely. Repeat this process with the remaining wrappers.
- Heat Oil: In a deep skillet, heat enough vegetable oil to submerge the egg rolls to 350°F (175°C). Use a thermometer for accuracy to ensure perfect frying temperature.
- Fry Egg Rolls: Carefully place the egg rolls into the hot oil in batches, frying each for 2 to 3 minutes on each side or until they become golden brown and crispy.
- Drain and Serve: Remove the fried egg rolls using a slotted spoon, draining excess oil by placing them on paper towels. Dust with powdered sugar if desired and serve warm for best flavor and texture.
Notes
- Ensure the cream cheese is fully softened to blend smoothly with sugar and vanilla.
- Do not overfill the egg rolls to prevent leaking during frying.
- Maintain oil temperature for even frying and to avoid greasy egg rolls.
- Use fresh egg roll wrappers that are pliable and not dried out for easy rolling.
- Powdered sugar is optional but adds a sweet finishing touch.
