  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups fresh or frozen cherries (pitted and halved)

Topping:

  • 1/4 cup light brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  3. Mix Wet Ingredients: In a large bowl, cream together butter and granulated sugar. Beat in eggs and vanilla. Mix in flour mixture and buttermilk until just combined. Gently fold in cherries.
  4. Make Topping: Combine brown sugar and cinnamon in a small bowl.
  5. Fill Muffin Cups: Fill muffin cups 3/4 full with batter. Sprinkle the brown sugar-cinnamon mixture over each muffin.
  6. Bake: Bake for 18-22 minutes until a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
