Lasagna Roll Ups:
- 8 lasagna noodles, cooked and drained
- 2 cups cooked, shredded chicken breast
- 2 cups Alfredo sauce (store-bought or homemade)
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Prepare Filling: In a bowl, combine ricotta, 1 cup mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Mix in the shredded chicken.
- Fill and Roll: Spread chicken-ricotta mixture on each lasagna noodle, roll up tightly.
- Assemble: Spread Alfredo sauce in the baking dish. Place roll-ups seam-side down, pour remaining sauce, and top with mozzarella.
- Bake: Cover with foil, bake for 20 mins. Uncover, bake 10–15 mins until golden. Garnish with parsley.
Notes
- Use rotisserie chicken for convenience.
- Add sautéed spinach or mushrooms for extra veggies.
- Roll-ups can be assembled ahead and refrigerated before baking.
