Instructions
- In a large Dutch oven or soup pot, heat butter and olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5–6 minutes until softened.
- Stir in garlic, thyme, salt, and pepper, and cook for 1 minute more.
- Sprinkle flour over the vegetables and cook for 1–2 minutes, stirring constantly.
- Gradually add chicken broth, stirring to avoid lumps. Bring to a simmer and cook for 10 minutes until slightly thickened.
- Stir in the cooked shredded chicken and heavy cream. Keep at a low simmer while you prepare the dumplings.
- For the dumplings, whisk together flour, baking powder, and salt in a bowl. Add melted butter and milk, and stir just until combined (do not overmix).
- Drop spoonfuls of dumpling dough onto the simmering soup. Cover the pot with a tight-fitting lid and let the dumplings cook for 15–18 minutes without lifting the lid, until they are puffed and cooked through.
- Remove from heat, sprinkle with fresh parsley if desired, and serve hot.
