For the dumplings:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons butter (melted)
  • ½ cup milk

Instructions

  1. In a large Dutch oven or soup pot, heat butter and olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5–6 minutes until softened.
  2. Stir in garlic, thyme, salt, and pepper, and cook for 1 minute more.
  3. Sprinkle flour over the vegetables and cook for 1–2 minutes, stirring constantly.
  4. Gradually add chicken broth, stirring to avoid lumps. Bring to a simmer and cook for 10 minutes until slightly thickened.
  5. Stir in the cooked shredded chicken and heavy cream. Keep at a low simmer while you prepare the dumplings.
  6. For the dumplings, whisk together flour, baking powder, and salt in a bowl. Add melted butter and milk, and stir just until combined (do not overmix).
  7. Drop spoonfuls of dumpling dough onto the simmering soup. Cover the pot with a tight-fitting lid and let the dumplings cook for 15–18 minutes without lifting the lid, until they are puffed and cooked through.
  8. Remove from heat, sprinkle with fresh parsley if desired, and serve hot.
