Pasta:
- 12 ounces pasta (fettuccine or penne)
Chicken:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts sliced into strips
- 1 teaspoon salt
- ½ teaspoon black pepper
Creamy Mushroom Sauce:
- 1 tablespoon butter
- 8 ounces cremini or white mushrooms sliced
- 3 cloves garlic minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes (optional)
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Cook the Pasta: Cook pasta according to package directions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
- Sear the Chicken: In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper, then cook for 5 to 7 minutes until golden and cooked through. Remove from pan and set aside.
- Prepare the Sauce: In the same skillet, melt butter. Add mushrooms and sauté for 5 to 6 minutes until browned and tender. Add garlic and cook for 1 minute until fragrant. Pour in chicken broth and simmer for 2 to 3 minutes. Stir in heavy cream and Parmesan cheese. Add Italian seasoning and red pepper flakes if using. Simmer for 3 to 5 minutes until sauce thickens slightly.
- Combine and Serve: Return chicken to the skillet, along with cooked pasta. Toss everything together, adding a bit of reserved pasta water if needed to loosen the sauce. Garnish with chopped parsley and more Parmesan if desired. Serve warm.
