Chicken:

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts sliced into strips
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Creamy Mushroom Sauce:

  • 1 tablespoon butter
  • 8 ounces cremini or white mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Cook the Pasta: Cook pasta according to package directions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
  2. Sear the Chicken: In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper, then cook for 5 to 7 minutes until golden and cooked through. Remove from pan and set aside.
  3. Prepare the Sauce: In the same skillet, melt butter. Add mushrooms and sauté for 5 to 6 minutes until browned and tender. Add garlic and cook for 1 minute until fragrant. Pour in chicken broth and simmer for 2 to 3 minutes. Stir in heavy cream and Parmesan cheese. Add Italian seasoning and red pepper flakes if using. Simmer for 3 to 5 minutes until sauce thickens slightly.
  4. Combine and Serve: Return chicken to the skillet, along with cooked pasta. Toss everything together, adding a bit of reserved pasta water if needed to loosen the sauce. Garnish with chopped parsley and more Parmesan if desired. Serve warm.
