  • 3 tablespoons olive oil, divided
  • 1 lb baby potatoes, halved
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1/4 cup chicken broth or water

For Garnish:

Instructions

  1. Cook the Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add halved baby potatoes cut-side down and cook for 8-10 minutes until golden brown and fork-tender. Remove and set aside.
  2. Cook the Chicken: Add the remaining olive oil to the skillet. Cook seasoned chicken pieces until browned and cooked through, about 6-8 minutes. Add onion and garlic; sauté until fragrant.
  3. Combine Ingredients: Return potatoes to the skillet, add chicken broth, and stir. Cover and simmer for 5 minutes to meld flavors.
  4. Garnish and Serve: Remove from heat, garnish with parsley, and serve hot.
