For the Curry:
- 1 tablespoon coconut oil
- 1 pound boneless, skinless chicken breast or thighs (cut into bite-sized pieces)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 2 tablespoons red Thai curry paste
- 2 cups pumpkin purée (or 1½ cups cubed pumpkin or butternut squash)
- 1 (13.5 oz) can coconut milk
- ½ cup chicken broth
- 1 tablespoon fish sauce (or soy sauce)
- 1 tablespoon brown sugar
- 1 red bell pepper (sliced)
- 1 cup green beans or snap peas
- Salt and pepper to taste
- Fresh basil or cilantro and lime wedges for garnish
- Cooked jasmine rice for serving
Instructions
- Prepare the Curry: Heat the coconut oil in a large skillet or saucepan over medium heat. Add the chicken and cook for 5–6 minutes until lightly browned. Remove and set aside. In the same pan, sauté the onion for 2–3 minutes until softened.
- Stir in the garlic, ginger, and red curry paste and cook for another 1–2 minutes until fragrant. Add the pumpkin purée, coconut milk, and chicken broth. Stir well to combine.
- Return the chicken to the pan, then add the fish sauce, brown sugar, bell pepper, and green beans. Simmer for 10–15 minutes, or until the chicken is cooked through and vegetables are tender.
- Taste and adjust seasoning with salt and pepper. Serve hot over jasmine rice, garnished with fresh herbs and lime wedges.
Notes
- You can use canned pumpkin for ease or fresh cubed pumpkin for more texture.
- Adjust curry paste to taste if you prefer a milder or spicier dish.
