Chicken Broth:

  • 1 whole chicken carcass or 2–3 pounds chicken bones (with some meat)
  • 10 cups water
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, smashed
  • 1 bay leaf
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon apple cider vinegar
  • Salt to taste

Instructions

  1. Prepare the Broth: Place the chicken bones in a large stockpot, add water, and bring to a boil. Skim off any foam that rises to the top.
  2. Add Ingredients: Include onion, carrots, celery, garlic, bay leaf, peppercorns, and apple cider vinegar. Simmer uncovered for 4 to 6 hours.
  3. Strain and Season: Strain the broth, discarding solids. Season with salt to taste. Let cool before storing.

Notes

  • For a richer broth, roast the bones at 400°F for 30 minutes before simmering.
