Additional Ingredients:

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 4 large flour tortillas

Instructions

  1. Prepare the Chicken Filling: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until softened. Stir in garlic, cumin, chili powder, paprika, salt, and pepper. Add the shredded chicken, black beans, and cooked rice. Cook until heated through.
  2. Finish the Burrito: Remove from heat and stir in salsa, lime juice, cilantro, and sour cream. Divide the mixture onto tortillas, top with cheese, fold in the sides, and roll tightly into a burrito.
  3. Optional: For a crispy exterior, sear the burritos in a skillet for 2–3 minutes per side. Serve warm with extra salsa, sour cream, or guacamole.
