For the Chicken Chili:

  • 1 1/2 pounds boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced (optional)
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the diced chicken and cook until lightly browned but not fully cooked through.
  2. Remove the chicken and set aside. In the same pot, sauté diced onion until translucent.
  3. Add garlic, bell peppers, and jalapeño if using. Cook until softened.
  4. Return the chicken to the pot. Stir in white beans, diced tomatoes, green chilies, and chicken broth.
  5. Season with cumin, chili powder, smoked paprika, oregano, cayenne pepper, salt, and pepper.
  6. Bring the chili to a boil, then simmer uncovered for 25-30 minutes, stirring occasionally.
  7. Stir in lime juice. Serve in bowls and garnish with cilantro.

Notes

  • Top with shredded cheese, sour cream, or avocado for extra flavor.
  • For a thicker chili, mash some of the beans into the soup as it simmers.
