Chicken Chili with White Beans:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 can (4 ounces) diced green chiles
- 4 cups low-sodium chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 1/2 cup frozen or canned corn
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and cook for about 5 minutes until translucent.
- Stir in the garlic and cook for another minute.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the white beans, diced green chiles, and chicken broth.
- Add the cumin, oregano, chili powder, coriander, cayenne pepper if using, salt, and black pepper.
- Bring the chili to a boil, then reduce heat and simmer uncovered for 20-25 minutes until the chicken is cooked through and the flavors meld.
- Stir in the corn and cook for an additional 5 minutes.
- Remove from heat and stir in the sour cream, chopped cilantro, and lime juice.
- Taste and adjust seasoning if needed.
- Serve hot with your favorite toppings.
