Scale
Crust Ingredients
- 1 egg
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded mozzarella cheese
- 1 lb ground chicken breast
Topping Ingredients
- 9 oz chopped romaine lettuce (about 1 head)
- 1/2 red onion, thinly sliced
- 1/4 cup prepared Caesar salad dressing (Ken’s Creamy Caesar recommended)
- 2 tablespoons shredded parmesan cheese
- Pinch of red chili pepper flakes (optional)
Instructions
- Preheat the oven: Preheat your oven to 400°F (204°C). Line a 13″ pizza pan with parchment paper or use nonstick sprayed foil. Alternatively, a half sheet pan can be used. Place a half sheet pan on the bottom rack to catch any drips from the crust during baking.
- Prepare the crust mixture: In a large mixing bowl, combine the egg, onion powder, garlic powder, dried oregano, salt, and pepper. Stir well with a fork to blend the spices evenly. Add the shredded mozzarella cheese, then crumble the ground chicken breast over the mixture. Stir until all ingredients are fully incorporated.
- Shape and bake the crust: Transfer the chicken mixture to the prepared pan and spread it into an 11″ circle with a spatula or a rectangle if using a sheet pan. Bake for 20 to 25 minutes, rotating the pan halfway through baking to ensure even cooking. The top will turn golden brown and any excess liquid will cook off. Remove and allow the crust to cool slightly.
- Toss the salad topping: While the crust cools, place the chopped romaine lettuce into a medium bowl. Add the Caesar dressing and toss gently to coat all the leaves evenly.
- Assemble and serve: Slice the chicken crust into four or more slices. Top each slice with the dressed Caesar salad, thinly sliced red onion, and sprinkle with shredded parmesan cheese. Optionally, add a pinch of red chili pepper flakes for extra heat. Serve immediately for best freshness and flavor.
Notes
- You can use ground turkey instead of chicken if preferred.
- If you want a crispier crust, bake a few minutes longer but watch carefully to avoid drying out.
- Adjust the amount of Caesar dressing according to your taste for creaminess.
- This pizza works well for low-carb or keto diet plans.
- Leftover slices can be refrigerated and eaten cold or gently reheated in a skillet to preserve crispness.
