For the casserole:

  • 4 cups cooked chicken breast, chopped
  • 4 cups fresh broccoli florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

For the topping:

  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Steam the broccoli: Steam the broccoli for about 3–4 minutes until just tender, then drain and set aside.
  3. Make the sauce: In a medium saucepan over medium heat, melt the butter and whisk in the flour to form a roux. Cook for 1 minute, then slowly whisk in the chicken broth and milk until smooth. Cook, stirring constantly, until the sauce thickens, about 3–5 minutes. Remove from heat and stir in sour cream, Dijon mustard, garlic powder, onion powder, salt, and pepper.
  4. Add cheese: Fold in 1 cup of the cheddar cheese and 1/4 cup of the Parmesan until melted.
  5. Layer and bake: In a 9×13-inch baking dish, layer the broccoli and chicken, then pour the cheese sauce evenly over the top. In a small bowl, mix breadcrumbs, olive oil, the remaining cheddar, and Parmesan. Sprinkle the breadcrumb mixture over the casserole. Bake uncovered for 25–30 minutes, or until bubbly and golden brown on top. Let rest for 5 minutes before serving.
