- 8 flour tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- 2 cups red enchilada sauce

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Sauté onions and chicken: In a skillet, sauté diced onions in olive oil until translucent. Add shredded chicken, cumin, garlic powder, salt, and pepper. Cook for 2-3 minutes.
- Assemble the enchiladas: Spread enchilada sauce in a baking dish. Fill each tortilla with chicken mixture and cheese, roll tightly, and place seam-side down in the dish.
- Bake: Pour remaining sauce over the enchiladas, top with cheese, cover with foil, and bake for 20 minutes. Uncover and bake for another 10 minutes until bubbly.
- Garnish and serve: Garnish with cilantro and desired toppings before serving.
