For the Chicken Filling:
- 2 cups cooked shredded chicken
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (4 ounces) diced green chilies

- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
For Assembly:
- 8 flour or corn tortillas
- 2 cups shredded Monterey Jack or Mexican blend cheese
- 2 cups red enchilada sauce
- Fresh chopped cilantro for garnish
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C).
- Sauté Onion: In a skillet, heat olive oil and sauté the diced onion until softened.
- Add Ingredients: Stir in garlic, chicken, green chilies, spices, salt, and pepper. Cook until heated through.
- Prepare Dish: Spread enchilada sauce in a baking dish. Fill tortillas with chicken mixture, cheese, and roll up. Place in the dish.
- Bake: Top with remaining sauce and cheese. Bake covered, then uncovered until bubbly.
- Serve: Rest before serving, garnish with cilantro.
