Description

For the Chicken Filling:

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (4 ounces) diced green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

For Assembly:

  • 8 flour or corn tortillas
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • 2 cups red enchilada sauce
  • Fresh chopped cilantro for garnish

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C).
  2. Sauté Onion: In a skillet, heat olive oil and sauté the diced onion until softened.
  3. Add Ingredients: Stir in garlic, chicken, green chilies, spices, salt, and pepper. Cook until heated through.
  4. Prepare Dish: Spread enchilada sauce in a baking dish. Fill tortillas with chicken mixture, cheese, and roll up. Place in the dish.
  5. Bake: Top with remaining sauce and cheese. Bake covered, then uncovered until bubbly.
  6. Serve: Rest before serving, garnish with cilantro.
