Chicken Fajita Mixture:

  • 1 lb boneless, skinless chicken breasts (sliced into thin strips)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small yellow onion (sliced)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice

Additional Ingredients:

  • 4 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • cooking spray or additional oil for pan
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. Prepare Chicken Fajita Mixture: In a skillet, cook chicken, peppers, and onion with spices until cooked through. Stir in lime juice.
  2. Assemble Quesadillas: Place cheese and chicken mixture on half of a tortilla. Fold over and cook until golden and cheese melts.
