- 1 small yellow onion (sliced)

- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lime juice
Additional Ingredients:
- 4 large flour tortillas
- 2 cups shredded Mexican blend cheese
- cooking spray or additional oil for pan
- Optional toppings: sour cream, salsa, guacamole
Instructions
- Prepare Chicken Fajita Mixture: In a skillet, cook chicken, peppers, and onion with spices until cooked through. Stir in lime juice.
- Assemble Quesadillas: Place cheese and chicken mixture on half of a tortilla. Fold over and cook until golden and cheese melts.

Notes
- For extra heat, add sliced jalapeños or a pinch of cayenne.
