  • 1 lb boneless, skinless chicken breasts (sliced into thin strips)
  • 2 tablespoons olive oil
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small onion (sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked long grain rice
  • 2 1/4 cups chicken broth
  • juice of 1 lime
  • 1/2 cup shredded cheddar or Mexican blend cheese (optional)
  • chopped fresh cilantro for garnish

Instructions

  1. Prepare Chicken: Heat 1 tablespoon of olive oil in a skillet, add and cook seasoned chicken strips until browned. Set aside.
  2. Sauté Vegetables: In the same skillet, sauté bell peppers, onion, and garlic. Add rice and toast.
  3. Cook Rice: Pour in chicken broth, bring to a boil, then cover and simmer until rice is tender.
  4. Combine Ingredients: Return cooked chicken to the skillet, stir in lime juice. Add cheese, cover to melt, and garnish with cilantro.
