Chicken Fajita Soup:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 small yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5-ounce) can diced tomatoes with juices
  • 1 (4-ounce) can diced green chiles (optional)
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream or half-and-half
  • juice of 1 lime
  • chopped cilantro, shredded cheese, and avocado for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken and cook for 5–6 minutes until browned and cooked through. Remove from the pot and set aside.
  2. In the same pot, add sliced onion and bell peppers. Sauté for 5–6 minutes until softened. Stir in garlic, cumin, chili powder, paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  3. Add diced tomatoes, green chiles (if using), and chicken broth. Return cooked chicken to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in heavy cream and lime juice, then simmer for another 3–5 minutes. Taste and adjust seasoning if needed.
  5. Serve hot, topped with cilantro, shredded cheese, and avocado if desired.
