For the Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1/2 cup white wine or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh baby spinach
  • 1/2 teaspoon Italian seasoning
  • juice of 1/2 lemon (optional)
  • chopped fresh parsley for garnish

Instructions

  1. Prepare the Chicken: Pat chicken dry and season with salt and pepper. Lightly dredge in flour. Sear in olive oil until golden brown and cooked through. Set aside.
  2. Make the Sauce: In the same skillet, melt butter and sauté garlic. Add wine or broth, then cream, Parmesan, and seasoning. Simmer until thickened.
  3. Finish the Dish: Add spinach to the sauce until wilted. Return chicken to the pan, spoon sauce over, and simmer together. Garnish with parsley and serve.
