Chicken Fricassee:
- 4 bone-in, skinless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
For the Sauce:
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 2 apples (such as Granny Smith), peeled, cored, and sliced
- 1 cup chicken broth
- 1/2 cup dry white wine
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme leaves
- 1 bay leaf
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped for garnish
Instructions
- Season the chicken thighs: with salt and pepper.
- Heat the olive oil and butter: in a large skillet over medium-high heat. Brown the chicken thighs on both sides for about 5 minutes per side. Remove chicken and set aside.
- Cook the onion and garlic: in the same skillet until softened. Add apple slices and cook until they start to soften.
- Deglaze the pan: with white wine, then add chicken broth, thyme, and bay leaf. Return chicken to the skillet, cover, and simmer until cooked through.
- Remove chicken and apples: to a serving platter. Stir heavy cream into the sauce and simmer until slightly thickened. Pour sauce over chicken and apples. Garnish with parsley before serving.

- For a lighter version, substitute half-and-half for the heavy cream.
