Chicken Fricassee:

  • 4 bone-in, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter

For the Sauce:

  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 apples (such as Granny Smith), peeled, cored, and sliced
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Season the chicken thighs: with salt and pepper.
  2. Heat the olive oil and butter: in a large skillet over medium-high heat. Brown the chicken thighs on both sides for about 5 minutes per side. Remove chicken and set aside.
  3. Cook the onion and garlic: in the same skillet until softened. Add apple slices and cook until they start to soften.
  4. Deglaze the pan: with white wine, then add chicken broth, thyme, and bay leaf. Return chicken to the skillet, cover, and simmer until cooked through.
  5. Remove chicken and apples: to a serving platter. Stir heavy cream into the sauce and simmer until slightly thickened. Pour sauce over chicken and apples. Garnish with parsley before serving.
