Marinated Chicken:
- 1 ½ pounds boneless, skinless chicken thighs
- 3 tablespoons olive oil
- 3 tablespoons plain Greek yogurt

- 1 tablespoon red wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Additional Ingredients:
- 4 pita breads
- 1 cup tzatziki sauce
- 1 cup shredded lettuce
- 1 medium tomato, diced
- ¼ red onion, thinly sliced
- fresh parsley for garnish
Instructions
- Marinate the Chicken: In a large bowl, combine olive oil, Greek yogurt, garlic, lemon juice, red wine vinegar, oregano, cumin, paprika, salt, and pepper. Add chicken thighs, coat well, cover, and refrigerate for at least 1 hour.
- Grill the Chicken: Preheat a grill or skillet. Cook marinated chicken for 5–6 minutes per side until fully cooked. Rest, then slice into strips.
- Assemble Gyros: Warm pita breads, spread tzatziki sauce, top with chicken, lettuce, tomato, red onion, and parsley. Serve hot.
