  • 1 pound ground chicken

  • 1 can (8 oz) water chestnuts, drained and chopped

Sauces and Seasonings

  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (optional, for heat)
  • 2 green onions, sliced
  • Salt and black pepper to taste

Wrapping

  • 1 head butter lettuce or iceberg lettuce, leaves separated

Instructions

  1. Cook the Chicken: Heat sesame oil in a large skillet over medium-high heat. Add ground chicken and cook for 5–6 minutes, breaking it apart with a spoon, until browned and cooked through.
  2. Sauté Aromatics: Stir in diced onion, minced garlic, and grated ginger, cooking for 2 minutes until fragrant and softened.
  3. Add Vegetables: Add finely diced red bell pepper and chopped water chestnuts, cooking for another 2 minutes to combine flavors and slightly soften the vegetables.
  4. Incorporate Sauces: Stir in hoisin sauce, soy sauce or tamari, rice vinegar, and optional sriracha for heat. Reduce heat to low and simmer for 2–3 minutes until the flavors meld together.
  5. Finish and Season: Remove skillet from heat and fold in sliced green onions. Season with salt and black pepper according to taste.
  6. Serve: Spoon the savory chicken mixture into individual lettuce leaves, folding them like tacos, and serve immediately for the best crispness.
