Chicken Marsala:
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 8 ounces cremini or button mushrooms, sliced
- 3/4 cup Marsala wine
- 3/4 cup chicken broth
- 2 tablespoons chopped fresh parsley
Instructions
- Pound the chicken: Place the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness.
- Season and dredge: In a shallow dish, mix the flour, salt, and pepper. Dredge each chicken breast in the seasoned flour, shaking off any excess.
- Cook the chicken: In a large skillet over medium heat, melt 2 tablespoons of butter with the olive oil. Add the chicken and cook for about 4-5 minutes per side, until golden brown and cooked through. Remove the chicken from the pan and set aside.
- Sauté mushrooms: Add the remaining butter to the same skillet and sauté the sliced mushrooms until golden, about 5 minutes.
- Deglaze and simmer: Pour in the Marsala wine and chicken broth, scraping up any browned bits. Simmer for about 10 minutes until the sauce thickens slightly.
- Finish cooking: Return the chicken to the skillet and cook for another 3-4 minutes, spooning the sauce over the chicken.
- Finish and serve: Garnish with chopped fresh parsley and serve immediately.
