Description

For the meatballs:

  • 1 pound ground chicken
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic (minced)
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For cooking:

  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, onion powder, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 1 1/2-inch balls using hands or a cookie scoop.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs in batches for 5-6 minutes per side until cooked through.
  4. Drain cooked meatballs on a paper towel-lined plate. Serve warm with desired accompaniments.

Notes

  • You can bake the meatballs at 400°F for 18–20 minutes as a lighter option.

  • Ground turkey can be substituted for ground chicken.
