  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup olive oil (for frying)

For the Arugula Salad:

  • 4 cups fresh arugula
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Dredge each chicken cutlet in flour, egg, and breadcrumb mixture.
  2. Fry the Chicken: Cook the cutlets in olive oil until golden and cooked through.
