Soup:
- 1 tablespoon olive oil
- 1 medium onion (diced)
- 2 carrots (peeled and sliced)
- 2 celery stalks (sliced)
- 3 cloves garlic (minced)
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Additions:
- 2 cups egg noodles (uncooked)
- 2 cups cooked shredded or diced chicken
- 2 tablespoons chopped fresh parsley
- Juice of 1/2 lemon (optional)
Instructions
- Saute Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened.
- Add Aromatics: Add garlic and cook until fragrant.
- Simmer: Pour in chicken broth, season with thyme, oregano, salt, and pepper. Bring to a boil.
- Cook Noodles: Add egg noodles and cook until tender.
- Finish Soup: Stir in cooked chicken, heat through. Remove from heat and add parsley, lemon juice.
- Serve: Enjoy warm with bread or crackers.
