Soup:

  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 2 carrots (peeled and sliced)
  • 2 celery stalks (sliced)
  • 3 cloves garlic (minced)
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Additions:

  • 2 cups egg noodles (uncooked)
  • 2 cups cooked shredded or diced chicken
  • 2 tablespoons chopped fresh parsley
  • Juice of 1/2 lemon (optional)

Instructions

  1. Saute Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened.
  2. Add Aromatics: Add garlic and cook until fragrant.
  3. Simmer: Pour in chicken broth, season with thyme, oregano, salt, and pepper. Bring to a boil.
  4. Cook Noodles: Add egg noodles and cook until tender.
  5. Finish Soup: Stir in cooked chicken, heat through. Remove from heat and add parsley, lemon juice.
