For the Soup:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth (low-sodium)
- 2 cups cooked shredded chicken
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 bay leaf
- 2 cups egg noodles, uncooked
- 2 tablespoons fresh parsley, chopped (optional)
- juice of ½ lemon (optional)
Instructions
- Heat olive oil: In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté until softened, about 5–6 minutes. Stir in garlic and cook for an additional minute.
- Add broth and seasonings: Pour in chicken broth and add shredded chicken, thyme, salt, pepper, and bay leaf. Bring to a boil, then simmer for 10 minutes.
- Cook noodles: Add egg noodles and cook for 8–10 minutes or until tender. Remove bay leaf. Stir in parsley and lemon juice if desired. Adjust seasoning to taste. Serve hot.
Notes
- For extra flavor, use a combination of chicken broth and bone broth.
- If preparing ahead, cook noodles separately and add to soup just before serving to prevent them from becoming soggy.
