- 2 cups egg noodles

Instructions
- Heat the olive oil: In a large pot over medium heat, heat the olive oil.
- Cook aromatics: Add the diced onion and cook until softened. Stir in minced garlic and cook until fragrant.
- Add vegetables: Add carrots and celery, cook for 5 minutes.
- Add broth and chicken: Pour in chicken broth, add shredded chicken, egg noodles, thyme, and parsley.

Notes
