Ingredients
Scale
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup Italian-style breadcrumbs
- ½ cup grated Parmesan cheese
- 2 large eggs
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
For Assembly:
- 1½ cups marinara sauce
- 1½ cups shredded mozzarella cheese
- 4 sandwich rolls or hoagie buns
- Fresh basil leaves (optional)
Instructions
- Preheat Oven and Prepare Chicken: Preheat your oven to 400°F (200°C). Pound the chicken breasts to an even thickness to ensure they cook uniformly.
- Set Up Breading Station: Arrange three shallow bowls: mix flour with garlic powder, dried oregano, salt, and black pepper in the first bowl; beat the eggs in the second bowl; and combine Italian-style breadcrumbs with grated Parmesan cheese in the third bowl.
- Bread the Chicken: Dredge each chicken breast first in the seasoned flour, then dip into the beaten eggs, and finally coat thoroughly with the breadcrumb-Parmesan mixture.
- Pan-Sear Chicken: Heat olive oil in a large skillet over medium heat. Cook the breaded chicken breasts for 3–4 minutes on each side until golden brown but not fully cooked through to lock in the crispy exterior.
- Bake the Chicken: Transfer the partially cooked chicken breasts to a baking sheet and bake in the preheated oven for 10–12 minutes, or until the internal temperature reaches 165°F (74°C) to ensure they are fully cooked.
- Add Sauce and Cheese: Remove the chicken from the oven, spoon marinara sauce over each piece, and sprinkle shredded mozzarella cheese on top. Return to the oven for another 3–5 minutes until the cheese is melted and bubbly.
- Toast Rolls and Assemble Sandwiches: Lightly toast the sandwich rolls if desired. Place each chicken breast on a roll, add fresh basil leaves if using, and serve warm.
Notes
- You can prepare the chicken ahead of time and reheat just before assembling the sandwiches to save time.
- For extra crunch, substitute regular breadcrumbs with panko breadcrumbs.
- Using fresh basil adds a fragrant and fresh flavor that complements the rich cheese and sauce.
- Ensure not to overcook the chicken in the skillet to keep it juicy after baking.
