Description

These Chicken Piccata Meatballs are a flavorful twist on traditional meatballs, combining ground chicken with tangy lemon, briny capers, and fresh parsley. Served in a savory sauce, they make a satisfying main course.

Ingredients

Scale

For the Meatballs:

  • 1 pound ground chicken
  • 1/2 cup plain breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Sauce:

  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • 1/3 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 2 tablespoons unsalted butter

For Garnish:

  • Additional chopped parsley
  • Lemon slices

Instructions

  1. Prepare the Meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Form into 1-inch meatballs.
  2. Cook the Meatballs: Heat olive oil in a skillet, cook meatballs until browned and cooked through. Transfer to a plate.
  3. Make the Sauce: In the same skillet, add chicken broth, lemon juice, and capers. Simmer, then stir in butter until smooth.
  4. Combine and Serve: Return meatballs to the skillet, spoon sauce over them. Simmer briefly. Garnish with parsley and lemon slices.

Notes

  • Serve over angel hair pasta, mashed potatoes, or with crusty bread to soak up the sauce.
