For the Salad:
- 2 cups cooked chicken breast, shredded or chopped
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls (bocconcini), halved if large
- 1/2 cup fresh basil leaves, torn or chopped
For the Dressing:
- 2 tablespoons olive oil
- 1 tablespoon balsamic glaze or reduction
- 1 tablespoon balsamic vinegar
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the cooked chicken, cherry tomatoes, mozzarella, and basil.
- Transfer to a serving platter or individual bowls and drizzle with balsamic glaze just before serving.
- Serve immediately, chilled or at room temperature.
Drizzle with olive oil and balsamic vinegar, then gently toss to coat all the ingredients evenly. Season with salt and pepper to taste.

- For added flavor, marinate the chicken in olive oil, garlic, and herbs before cooking.
