Description

This Chicken Salad Croissants recipe features a creamy and flavorful chicken salad made with shredded rotisserie chicken, fresh celery, sweet red grapes, and green onions, all tossed in a zesty mayonnaise and sour cream dressing with fresh dill and lemon juice. Chilled for hours to develop rich flavors, this filling is generously spread on buttery, flaky croissants, making it a perfect, easy-to-prepare sandwich ideal for lunches, picnics, or light dinners.

Ingredients

Scale

Chicken Salad

  • 1 ½ pounds (680 g) shredded chicken, cooked and shredded (rotisserie chicken recommended)
  • 1 ½ cups (180 g) chopped celery, fresh and crisp
  • 1 ½ cups (225 g) red grapes, halved
  • 2 green onions, thinly sliced

Dressing

  • 1 cup (240 ml) mayonnaise, good quality recommended
  • ¼ cup (60 ml) sour cream or ranch dressing
  • 2 tablespoons (8 g) fresh dill, chopped
  • 1 teaspoon (5 g) salt
  • 1 teaspoon (2 g) black pepper
  • Juice of 1 small lemon (approx. 1 tablespoon or 15 ml), freshly squeezed

Assembly

  • 8 croissants, flaky and buttery with golden-brown exterior

Instructions

  1. Combine Chicken and Vegetables: In a large bowl, mix the shredded chicken, chopped celery, halved red grapes, and thinly sliced green onions until evenly combined. Set aside while preparing the dressing.
  2. Prepare the Dressing: In a small bowl, whisk together mayonnaise, sour cream (or ranch dressing), fresh dill, salt, black pepper, and freshly squeezed lemon juice until the mixture is smooth and creamy.
  3. Mix Salad with Dressing: Pour the prepared dressing over the chicken mixture and gently stir with a spoon or spatula until all ingredients are thoroughly coated.
  4. Chill: Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld and deepen.
  5. Slice Croissants: Carefully slice each croissant horizontally with a serrated knife. If the croissants are too soft to slice easily, freeze them for 10 to 15 minutes before cutting to prevent tearing.
  6. Assemble Croissants: Spread about ½ cup (120 ml) of the chilled chicken salad evenly over the bottom half of each croissant and then place the top half back on.
  7. Serve: Serve immediately or cover and refrigerate if preparing ahead of time.

Notes

  • Using rotisserie chicken saves time and adds delicious flavor.
  • For easier slicing, chill croissants briefly in the freezer before cutting.
  • Substitute sour cream with ranch dressing for a different flavor twist.
  • Chilling the salad overnight enhances the flavor blend.
  • Best served fresh but can be refrigerated for up to 24 hours.
