Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

For the Salmoriglio Sauce:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
  • 2 cloves garlic (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the Grill: Preheat a grill or grill pan over medium-high heat.
  2. Season the Chicken: Rub the chicken breasts with olive oil, salt, pepper, oregano, and garlic powder.
  3. Grill the Chicken: Grill the chicken for 5–6 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  4. Prepare the Salmoriglio Sauce: Whisk together olive oil, lemon juice, lemon zest, parsley, oregano, garlic, salt, and pepper in a small bowl.
  5. Finish and Serve: Let the chicken rest for 5 minutes, then spoon the Salmoriglio sauce over the top. Serve warm with your choice of sides.

  • You can also pan-sear or bake the chicken if you don’t have a grill.
  • The sauce pairs well with seafood or vegetables.
