Marinade:
- 1 1/2 pounds boneless skinless chicken thighs or breasts, cut into strips
- 1/2 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 tablespoons brown sugar
- 2 tablespoons fresh lime juice
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon curry powder

Instructions
- Marinate the chicken: In a large bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, turmeric, coriander, and curry powder. Add chicken strips, toss to coat, cover, and refrigerate for at least 1 hour.
- Grill the chicken: Preheat grill to medium-high heat. Thread marinated chicken onto skewers. Grill for 3-4 minutes per side until cooked through and charred.
- Serve: Serve hot with peanut sauce and lime wedges.
