  • 1 1/2 pounds boneless, skinless chicken breasts, sliced into strips

  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • Juice of 1 lemon

For the Creamy Garlic Parmesan Rice

  • 1 cup long grain white rice
  • 2 1/4 cups chicken broth
  • 1/2 cup heavy cream
  • 3/4 cup grated Parmesan cheese

Instructions

  1. Season and Sauté Chicken: Season the chicken strips with salt, pepper, and red pepper flakes if using. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add chicken and sauté for 5–6 minutes until golden and cooked through. Remove chicken from the skillet and set aside.
  2. Prepare Scampi Sauce: Reduce heat to medium in the same skillet and add remaining 2 tablespoons butter. Sauté minced garlic for about 1 minute until fragrant. Pour in white wine (or chicken broth) and lemon juice. Let it simmer for 2–3 minutes to slightly reduce and intensify flavors. Stir in chopped parsley.
  3. Finish Chicken in Sauce: Return the cooked chicken to the skillet, tossing to thoroughly coat in the garlic-lemon sauce. Keep warm on low heat.
  4. Cook Rice: While the chicken simmers, bring chicken broth and rice to a boil in a medium saucepan. Reduce heat to low, cover, and simmer for 15–18 minutes until rice is tender and broth is absorbed.
  5. Make Creamy Parmesan Rice: Once rice is cooked, stir in heavy cream and grated Parmesan cheese until the mixture is creamy and smooth. Adjust seasoning if needed.
  6. Serve: Spoon the creamy garlic Parmesan rice onto plates. Top generously with the lemon-garlic chicken scampi. Garnish with extra Parmesan cheese and fresh parsley if desired. Serve immediately.
