- 4 tablespoons butter, divided
- 4 cloves garlic, minced

For the Creamy Garlic Parmesan Rice
- 1 cup long grain white rice
- 2 1/4 cups chicken broth
- 1/2 cup heavy cream
- 3/4 cup grated Parmesan cheese
Instructions
- Season and Sauté Chicken: Season the chicken strips with salt, pepper, and red pepper flakes if using. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add chicken and sauté for 5–6 minutes until golden and cooked through. Remove chicken from the skillet and set aside.
- Prepare Scampi Sauce: Reduce heat to medium in the same skillet and add remaining 2 tablespoons butter. Sauté minced garlic for about 1 minute until fragrant. Pour in white wine (or chicken broth) and lemon juice. Let it simmer for 2–3 minutes to slightly reduce and intensify flavors. Stir in chopped parsley.
- Finish Chicken in Sauce: Return the cooked chicken to the skillet, tossing to thoroughly coat in the garlic-lemon sauce. Keep warm on low heat.
- Cook Rice: While the chicken simmers, bring chicken broth and rice to a boil in a medium saucepan. Reduce heat to low, cover, and simmer for 15–18 minutes until rice is tender and broth is absorbed.
- Make Creamy Parmesan Rice: Once rice is cooked, stir in heavy cream and grated Parmesan cheese until the mixture is creamy and smooth. Adjust seasoning if needed.
- Serve: Spoon the creamy garlic Parmesan rice onto plates. Top generously with the lemon-garlic chicken scampi. Garnish with extra Parmesan cheese and fresh parsley if desired. Serve immediately.
