Marinated Chicken:

- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon red chili powder (optional)
- Pinch of salt
Additional Ingredients:
- 2 tablespoons vegetable oil or ghee
- 2 tablespoons butter
- 1 large onion, finely sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup raw cashews or almonds, soaked and ground to a paste
- 1/4 cup heavy cream
- 1/2 cup chicken broth or water
- 1/4 cup raisins (optional)
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro for garnish
- Slivered almonds for garnish (optional)
Instructions
- Marinate the Chicken: In a bowl, mix the chicken with yogurt, half of the ground spices, and a pinch of salt. Marinate for at least 30 minutes.
- Sauté Onions: Cook onions until caramelized. Set aside half for garnish.
- Cook Aromatics: Add garlic and ginger, then add marinated chicken and brown.
- Add Sauce Ingredients: Stir in nut paste, raisins, and broth. Simmer until chicken is cooked.
- Finish the Dish: Stir in cream, adjust seasoning, and simmer until sauce thickens. Garnish and serve hot.

- For extra richness, use full-fat yogurt and cream.
- To make it nut-free, omit the nuts and add more cream for body.
