  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 3 cloves garlic (minced)

  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • juice of 1 lemon

Creamy Garlic Sauce:

  • 1 cup mayonnaise
  • 3 tablespoons plain Greek yogurt
  • 3 garlic cloves (minced to a paste)
  • 1 tablespoon lemon juice
  • ½ teaspoon salt

For Serving (optional):

  • Pita bread or flatbreads
  • chopped lettuce
  • sliced cucumbers
  • diced tomatoes
  • red onion slices

Instructions

  1. Main Dish: In a large bowl, combine olive oil, garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, pepper, and lemon juice. Add the chicken thighs and toss to coat thoroughly. Marinate for at least 1 hour.
  2. Preheat grill or skillet over medium-high heat. Cook the chicken thighs for 5–7 minutes per side until fully cooked. Rest for 5 minutes, then slice.
  3. Creamy Garlic Sauce: Whisk together mayonnaise, Greek yogurt, garlic paste, lemon juice, and salt until smooth.
  4. Assemble shawarma by layering chicken into pita with desired toppings and garlic sauce. Serve warm.

  • You can substitute chicken breasts for thighs.
