Chicken Souvlaki:

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs (cut into 1-inch pieces)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic (minced)
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken pieces, coat evenly, cover, and refrigerate for 1-4 hours.
  2. Prepare Skewers: If using wooden skewers, soak in water for 30 minutes. Thread chicken onto skewers.
  3. Grill: Preheat grill to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until cooked through.
  4. Serve: Serve hot with pita, tzatziki, and veggies.
