Marinade:
- 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
- 3 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 3 garlic cloves, minced
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper

- Wooden or metal skewers
- Optional: chopped fresh parsley and lemon wedges for serving
Instructions
- Prepare Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Marinate Chicken: Add the chicken cubes to the marinade, toss to coat well. Cover and refrigerate for at least 30 minutes, preferably 2-3 hours.
- Preheat Grill: Preheat grill or grill pan over medium-high heat.
- Skewer Chicken: Thread the marinated chicken onto skewers.
- Grill Chicken: Grill skewers for 10-12 minutes, turning occasionally, until cooked through and lightly charred.
- Rest and Serve: Remove from grill, let rest for a few minutes. Serve warm, garnished with parsley and lemon wedges.
