For the Chicken:
- 2 tablespoons olive oil (divided)
- 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 garlic cloves (minced)
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley (chopped)
Instructions
- Cook the Egg Noodles: Prepare the egg noodles according to package directions. Drain, toss with 1 tablespoon of butter, and set aside.
- Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil. Season chicken with garlic powder, paprika, salt, and pepper. Cook chicken for 6–7 minutes until golden brown and cooked through. Remove chicken and set aside.
- Prepare the Sauce: In the same skillet, add remaining olive oil and garlic. Cook for 30 seconds, then deglaze the pan with chicken broth. Stir in remaining butter until melted. Add cooked noodles, toss to coat. Return chicken to the skillet and combine.
- Finish and Serve: Sprinkle with Parmesan cheese and parsley before serving.
