Instructions
- Za’atar Vinaigrette: In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, za’atar seasoning, honey or maple syrup, salt, and pepper.
- Salad: In a large bowl, combine chickpeas, chopped dates, diced avocado, cherry tomatoes, red onion, and parsley. Drizzle the za’atar vinaigrette over the salad ingredients and toss gently to coat.
- Serving: Arrange mixed greens or baby spinach on a serving platter or individual plates and spoon the chickpea mixture on top. Serve immediately.
